Sitting here at the computer thinking what new idea comes to mind, then boom. Why don't I list some Big Plans Ideas that you can dream on for a while.

Here goes Appetizers:

Foie Gras made of seared and honey glazed brioche toast, lavender Riesling gels, and blueberry gastrique. $20.00

Mediterranean Tuna Rolls made of flashed cured and cold smoked Ahi, unsalted chevre, baby greens, pickled shallots and red pepper coulis. $15.00

How about a simple beef skewers of grilled marinated beef and root vegetables and smoked Gouda sauce. $13.00

Final appetizer of crab martini made of jumbo lump crabmeat with avocado in a creamy remoulade dressing. $14.00

Salads:

Soft shell crab & spinach salad of fried soft shell crab over baby spinach with grape tomatoes, goad cheese crotons, sweet and spicy rosemary roasted pecans, with balsamic vinegar. $14.00

Cobb salad with chopped lettuce topped with tomato, avocado, cucumber, boiled eggs, grilled chicken and thick cut house cured bacon with buttermilk blue cheese dressing on the side. $12.00

Big apple salad made of mixed greens, sliced apple, toasted pecans and crumbled Maytag blue cheese, topped with smoky bacon dressing. $10.00

Now comes the Main Events:

Black drum, pan scared with lump crab stuffing, local seasonal vegetables and a crab butter sauce. $26.00

Pork that is bacon wrapped and cracklin crusted tenderloin of cured-roasted belly. Brussels sprouts caramelized compressed pear, sweet potato puree and cherry jus. $30.00

Sea Bass pan roasted mero, root vegetables and mushroom risotto, pan butter sauce, and fresh baby greens. $34.00

Or for a Brunch of steak and eggs.

Tenderloin medallion over English muffins with blackened tomato slices and poached eggs. Topped with truffle and wild mushroom demy glace and laced with hollandaise sauce. $26.00

The big question is when planning is "What shall we have for dessert:"----meaning what shall we serve that will make people lie in bed wishing they had eaten more.

Shall it be apples, bananas, fruit creams, puddings, sherbet, souffle, tropical or even dessert drinks.

I don't like big desserts so here comes a couple of easy ones that will not kill the final bill.

Sherry-Baked Bananas sounds great. Take 5 bananas, whole,1 whole lemon, sliced on top of the bananas,1/4 cup white sugar, 1/2 jigger brown sugar, nutmeg, 4 bananas, sliced lengthwise in halves.

Spread 4 peeled ripe bananas with apricot jam and pour over a mixture of equal parts sherry, melted butter, brown sugar, and a bit of lemon juice.

bake in moderate oven 20 to 25 minutes, Baste occasionally.

If you have any brandied fruit, it may be used instead of the jam and sherry mixture.

One more: Orange souffle. Take 1 egg white per person, 1 Tssp. sugar per egg white, 1 Tbsp. orange marmalade per egg white. Now beat egg whites stiff. Add sugar and marmalade. Cook one hour in buttered couble boiler, with top on. If top rises, do not disturb it. Unmold to serve, and serve with whipped cream flavored with sugar and a drop of almond extract.

You might have noticed that no wine, mixed drinks, and tea, coffee, of water is listed.
