Comments to me over the years has been make them simple and easy to follow. I have tried my best in presenting these ideas in the right season.

I. Tomato Juice

1 C. sugar

2 t. salt

1 t. garlic salt

2 t. celery salt

2 t. onion salt

Boil tomatoes, strain, and add the above contents. Boil thoroughly and seal while hot. Makes 7 quarts.

II. 6 Day Catsup

1/2 bushel tomatoes

1/4 C. mixed pickle spice

1 C. vinegar

1/2 C. water

1/4 C. salt

3 medium onions

5 C. sugar

1/4 C. cornstarch

Slice unpeeled tomatoes and put in crock in layers and sprinkle each layer with salt. Place light weight on top. Let stand 5 days, drain water off each day. On 6th day drain well. Run pulp through colander. Add all ingredients except water and cornstarch. Tie all spices in a bay. Cook 45 minutes. Take cornstarch and water to make a paste. Add to catsup and cook 10 minutes longer. Can and seal.

III. Catsup

1 gallon raw tomatoes

1 large onion

1 T. pickling spice

Cook together 5 to 10 minutes. Put in sack cloth. Hang on clothesline 1 hour or more. Put through sieve, add 1 C. vinegar, 2 t. salt, 1 C. sugar, 1/4 t. red pepper. Cook 10 minutes, bottle and seal.

IV. Canned Tomatoes

Cook 1 peck tomatoes, 2 bunches celery, 1bunch parsley, 3 med. size onions and 3 green peppers until soft. Put through sieve then add 1 C. sugar, 1/4 C. salt, 1/4 t. pepper. Can boiling hot and seal. This is good when diluted for a juice drink or for soup.

V. Green Tomato Pickles

15 lbs. sliced green tomatoes. Sprinkle with 1 C. salt and allow to stand overnight. The following morning mix:

1 qt. vinegar

2 T. whole allspice

5 pt. sugar

1 stick cinnamon

Boil 15 minutes or longer. Add drained tomatoes and simmer 15 minutes. Put in jars and seal.

VI. Heinz Green Tomato Relish

1/2 pk. green tomatoes

8 red peppers

2 or more large onions

Put the above through a c hopper. Boil for 15 minutes.

Remove from stove and salt. Boil for 15 minutes again.

Drain through colander. Add the following ingredients:

1 pt. vinegar

3 C. sliced green tomatoes

1 pt. sugar

2 sticks cinnamon

2 T. whole allspice

2 T. whole cloves

Boil rapidly, then add 1 T. celery seed and 1 t. mustard seed. Jar and seal.

VII. Indian Green Tomato Relish

1 gal. green tomatoes, ground

1/4C. salt

Let stand overnight. Drain and add 6 peppers, green or colored. 1 head cabbage, 4 onions. 1 stalk celery, 4 C. sugar, 1 T. turmeric, 1 T. cloves, 1 T. cinnamon, 1 T. celery seed, 1 qt. vinegar. Cook about 1 1/2 hours.

VIII. Green Tomato Pie

3 C. sliced green tomatoes

3 T. flour

1/4 t. salt

1 1/3 C. flour

3 T. butter

Mix all together and pour into pie shell. Bake until tomatoes are tender.
